Cooking for People Unsure of What a Stove Does: Recipe 7 - Handmade Pasta!


I am not even going to try this anymore.

    After a long, unexplained, and unforgivable absence, I am back!  Be prepared for a storm of double posts as I play catch-up.  Anywho, here is a short recipe to tide you over until this week's post downpour!



Handmade Pasta:

Ingredients:
  • Flour
  • Eggs
  • Salt
  • Tomatoes (cherry)
  • Cheese (take your pick, but softer is better)
  • Pesto (again take your pick, but we went with green)
  • Bell pepper (1)
  • Arugula
  • Scallions (to taste)
  • Salt and pepper (to taste; try white pepper this time)
  • Cauliflower and broccoli (if you're feeling peckish)
  • Sunflower seeds (or similar; to taste)
  • Beet juice (optional; for color)
  • Oil
That beet juice though.  Go heavy on the coloring if you
want darker pasta.




     First and foremost, you need to mix up your pasta dough (involving the eggs and flour).  Due to the severe risk of creating inedible dough, I wasn't allowed anywhere near the dough before it was cooked, but I've found a video which hits the nail on the head.  Basically, go one for one, cups of flour to eggs, combine, and knead.  If you intend to add coloring, now's the time.


But seriously, use an excessive amount of flour.





     After allowing the dough to rest for about 20 minutes, roll it flat (get creative if you don't have a rolling pin), and liberally coat it in flour.  Then, roll it over on itself in thirds, and cut into strips.





Basically, this picture is photographic bragging rights.
That's about it.





     Next, boil the pasta (please take notes that it will cook in a very short period of time), and drain.  Toss the cooked pasta with oil







So much color!





  Then, get cutting!  Halve your tomatoes, slice the bell pepper, chop those scallions, and chunk up the cheese.








Look at that photo op!



     Toss the cooked pasta with the pesto (you may have to combine this with some oil to get it spreadable), cheese, arugula, tomatoes, scallions, and bell pepper slices.  Then, if you happened to have made the broccoli and cauliflower (steam/boil these first!), top the pasta with these, otherwise, sprinkle some of the seeds over the top and serve!  Guten Appetit!
